Derived from a recipe in Clone Brews for Smuttynose Scotch-Style Ale.

Procedure

  • Single infusion mash.
  • Draw off 1 gallon of mixture and carmelize by boiling down to 1/2 gallon. Add to kettle.
  • Bring to boil.
  • Add hops and boil 60 minutes.
